There's a brat in my kitchen

It’s time once again for the Great Cookie Exchange!

Safe to say that my recipe is one for the chocolate fans among you – these are quite possibly the chocolatiest chocolate cookies in the universe.

Also safe to say that the interest of my uber-cute (and uber-naughty) alter-ego, Little Penny, was thoroughly piqued at the mention of the magic words ‘choklit’ and ‘cooky’. Bless her.

It only seems fair, then, to present two versions of the recipe. Rest assured that whichever one you use will result in chocolate bliss!

Insanely chocolatey cookies

Ingredients
  • 125g (4.5oz) dark chocolate
  • 350g (12oz) dark chocolate chips
  • 30g (1oz) cocoa powder
  • 50g (1.75oz) white sugar
  • 75g (2.5oz) soft brown sugar
  • 150g (5.25oz) plain flour
  • 125g (4.5oz) soft butter
  • 1 tsp bicarbonate of soda
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 large egg

Preparation
  1. Preheat oven to 170°C/325ºF (gas mark 3)
  2. Melt the chocolate in a heatproof dish over a pan of simmering water
  3. Put the flour, cocoa, bicarbonate of soda and salt into a mixing bowl
  4. Put the butter and sugars in another bowl and cream together. Pour the melted chocolate in and mix
  5. Beat in the vanilla extract and egg, then mix in the dry ingredients, then the chocolate chips
  6. Scoop out 12 mounds onto a lined baking sheet
  7. Bake for 18 minutes
  8. Leave to cool on the baking sheet for 5 minutes, then transfer to a cooling rack to harden

  6. My skills in the kitchen are limited. I'll have to follow Little Penny's resipy.

And hey, if all else fails, you've got a big bowl of melted chocolate to scoff with a nice gooey wooden spoon. Ohhh...

  7. My boyfriend and his family LOVE chocolate while I'm less of a fan of the stuff. I'll have to make these for him and his fam, I'm sure they'll sink into chocolatey bliss. Penny's directions are adorable, btw! Thanks for sharing.
